Garden Marak (Soup)
Marak is the Hebrew word for soup. This recipe is a great way to utilize vegetables in your garden.
  1. Warm the oil in a large soup pot on medium heat. Add the onions, celery, carrots, oregano, salt and pepper and saute for 3-5 minutes.
  2. Add the garlic and greens and saute until greens are just wilted, about 3 minutes.
  3. Add tomatoes, squash, potatoes and broth. Bring to a boil, then simmer for 15 minutes.
  4. Add broccoli and Brussels sprouts, and simmer for another 5 min or until veggies are tender.
  5. For a thicker soup base, blend 1-2 cups of the soup in a blender and add the blended mixture back into the soup.
  6. Serve with toasted garlic bread.
